Fresh, ripe peaches are one of the pure joys of summer. They’re
not around for long, so it’s important to enjoy them while you can.
Fresh Peach Ice Cream
2 cups ripe peaches, peeled, pitted, and sliced
1 tablespoon lemon juice
1 cup sugar
1 1/2 cups whole milk
1 1/2 cups heavy cream
1 teaspoon pure vanilla extract
In a medium bowl, combine the sliced peaches with lemon
juice and half a cup of sugar. Allow mixture to sit 2 hours, stirring
occasionally. Mash peaches with a fork. In another bowl, mix milk, remaining
sugar, and vanilla. Add peach mixture and cream to the milk mixture; stir until
combined. Cover the mixture and refrigerate at least 2 hours. Pour chilled
mixture into ice cream maker and process 20 to 25 minutes. Transfer to airtight
container and freeze at least 2 hours before serving.
