Cottage Mosaic




Our produce box this week contained beets, asparagus, pears, oranges, lettuce, kale, limes and Bing cherries. The kale and beet greens were a lovely chopped salad. We sauteed the asparagus last night, and we'll probably roast the beets tomorrow. The pears and oranges will be tucked into lunch boxes. The lettuce is the ‘L’ in BLT sandwiches. The limes and cherries were yesterday's amazing breakfast:

Cherry Lime Smoothies

Juice of 1 lime
1 cup pitted sweet cherries
5.3 ounces Greek-style yogurt (I used Chobani Key Lime Blended, but other kinds will do.)
1 1/2 cups crushed ice
Handful of granola (My current favorite is Special K Low Fat.)

Place first three ingredients in blender and pulse until smooth. Pour into tumblers and garnish with granola. Make one large or two small servings.
