Summertime is when salads really shine, and this is one of
my favorites. It has a bit more sugar and fat than most salads, but I don’t
care.
Strawberry Spinach Salad
1/4 cup olive oil
2 tablespoons balsamic vinegar
2 tablespoons brown sugar
10 cups torn spinach leaves
3 cups strawberries, hulled and sliced
8 slices bacon, cooked and crumbled
1/4 cup slivered almonds, toasted
1/3 cup feta, crumbled
Combine oil, vinegar and sugar in a small bowl; whisk until well
blended. Set aside. In a large bowl, combine spinach, berries, and bacon. Add
dressing and toss gently. Sprinkle nuts and cheese on top and serve
immediately.
