Whole Orange Pound Cake
1 whole seedless navel orange, seeds removed
4 large eggs
3/4 cup canola oil
1 cup sugar
1 teaspoon lemon extract
2 cups flour
2 1/4 teaspoons baking powder
1/2 teaspoon salt
Preheat the oven to 350F. Line 9x5” loaf pan with parchment and
coat with baking spray. Put eggs, oil, lemon extract, and quartered orange into
a high-powered blender, then add the flour, sugar, baking powder, and salt. Blend
for 30 to 40 seconds or until a thick, pourable batter forms. Pour batter into pan
and bake 45 to 50 minutes. To test if it's done, poke a toothpick into pan between the side and middle. Toothpick should come out
clean. Remove from oven and let cool 10 minutes before removing cake from pan.
