This time of year we’d normally be harvesting walnuts, but
there was an ill-timed frost this spring that killed all but five. I’m reminded
I almost chose an apple tree for the spot where my walnut tree stands. There
are so many wonderful things you can do with apples. You can peel and slice
them, brush them with lemon juice and make dried apples in your oven overnight.
With a bit more work you can have apple fruit leather. You can preserve
applesauce, apple pie filling and apple butter to enjoy all year. You can make
candy apples with corn syrup and boiled cherry candies, or you can cover them
in caramel, chocolate and chopped nuts. You can add them to savory stuffing, Bavarian
sauerkraut, or potato pancakes. You can make baked apples, apple pie,
applesauce cake, apple fritters, apple strudel, or apple dumplings. Or skip the
work and eat them raw, like I’m doing now.
