Lemon Blueberry Bread
1 1/2 cups flour
1 teaspoon baking powder
1 teaspoon salt
1/3 cup butter, melted
1 cup sugar
2 eggs
1/2 teaspoon vanilla
2 tablespoons lemon juice
1/2 cup milk
1 cup blueberries
1 tablespoons flour
2 tablespons butter, melted
1/2 cup powdered sugar
2 tablespoons lemon juice
1/2 teaspoon vanilla
Preheat oven to 350F and butter a standard loaf pan. In a
medium bowl, whisk flour, baking powder and salt; set aside. Blend together butter,
sugar, eggs, vanilla, and lemon juice.
Mix well. Stir dry mixture into wet mixture just until combined. Toss
blueberries in 1 tablespoon flour, then gently fold into batter. Pour into pan
and bake one hour. Cool 30 minutes, then
remove from pan. Whisk remaining four ingredients together and drizzle over
bread. Slice after bread has completely cooled.
