Four Log Cabins

One of my favorite things about this time of year is that it makes me feel like filling my house with delightful aromas, like this one:

Slow Cooker Beef Bourguinon

5 slices bacon, chopped
3 pounds chuck, cut to 1 inch cubes
1 cup red wine
2 cups beef broth
1/2 cup tomato sauce
1/4 cup soy sauce
1/4 cup flour
3 garlic cloves, minced
2 tablespoons thyme, chopped
5 carrots, sliced
1 pound small potatoes
8 ounce mushrooms, sliced


In a large skillet cook bacon until crisp. Add to slow cooker. Put beef in skillet and sear on each side 2-3 minutes. Transfer beef to the slow cooker. Deglaze skillet with wine. Bring to a simmer and add broth and tomato sauce, and soy sauce. Slowly whisk in the flour. Pour sauce into slow cooker. Add garlic, thyme, carrots, potatoes, and mushrooms. Cook on low until beef is tender for 8-10 hours or high for 6-8.
