Apple Walnut Salad
1 large Granny Smith apple, cored and coarsely chopped
1 large Gala apple, cored and coarsely chopped
1/2 cup golden raisins (Dried cranberries work well, too.)
1/2 cup plain yogurt
1 tablespoon sugar
1 tablespoon orange juice
1/2 cup chopped walnuts, toasted (It’s more work, but totally
worth it.)
In a large bowl, combine apples and raisins. In a smaller
bowl, stir together yogurt, sugar and orange juice. Pour the juice mixture over
the fruit and toss to combine. Chill for at least an hour. Right before
serving, add walnuts and toss again.
