Back and Forth



I’d known about Mardi Gras before we moved to England. But I’d never heard it called Pancake Tuesday until we’d lived there nearly a year. In the UK, Australia and Canada today is a day to eat pancakes and use up rich foods like eggs, milk and sugar before Lent begins. I presume no one tells chickens and cows to take a break between now and Easter. So what happens to the eggs and milk produced over the next 44 days?

Blender Pancakes

Oil for pan
1 egg
1 tablespoon melted butter
1/2 cup milk
1/2 teaspoon salt
2 teaspoons baking powder
2 tablespoons sugar
1 cup whole wheat flour

Grease skillet, mopping up any excess oil. Add remaining ingredients to blender IN THE ORDER GIVEN. Pulse just until mixed. Don’t over blend. Pour small pancakes into pan. When bubbles form on top, turn and cook 5 to 10 seconds more. Serve hot with maple syrup.
