Next-Door Neighbor



Kale is a super food: it’s very good for you. You can add it to smoothies, soups, stews, and salads. Probably the easiest way to use it, though, is to turn it into:

Baked Kale Chips

1 bunch fresh kale
1 tablespoon (roughly) olive oil
1 teaspoon coarse sea salt

Preheat your oven to 350F. Line a cookie sheet with parchment paper. With a sharp knife or kitchen shears, cut kale leaves away from the thick stem. Rinse and thoroughly dry the leaves (this is where a salad spinner would come in handy). Spread leaves evenly over parchment paper. Sprinkle with olive oil and sea salt. If you have a blend of seasoning salt that you prefer, I’m sure it would be fine. Bake until the edges are crispy but not burnt; about 10 or 15 minutes. Serve immediately. A healthier choice than popcorn or potato chips, these make terrific snacks for a night in watching movies.
