Crustless Florentine Pie
16 ounces cottage cheese
10 ounces frozen chopped spinach, thawed, well drained
1 cup shredded mozzarella
4 large eggs, lightly beaten
1 jar (7 ounces) roasted red peppers, well drained and chopped
1/3 cup grated Parmesan
1 teaspoon oregano
Preheat oven to 350F. Mix all ingredients until well blended.
Pour into 9-inch pie plate sprayed with cooking spray. Bake 40 minutes or until
center is set. Serve with a Caesar salad and fresh bread.
