There are almost as many recipes for this dish as there are
cooks preparing it. I’ve seen it served hot over rice and cold as a sandwich
filling, with dried fruits, nuts and scallions, or completely on its own.
Coronation Chicken
4 cooked chicken breasts, chopped
2 tablespoons olive oil
1 onion, minced
1 tablespoon curry powder
1/2 cup chicken broth
1 teaspoon tomato puree
Juice from 1/2 lemon
2 tablespoons apricot jam
1 cup mayonnaise
3 tablespoons heavy cream
Saute onion in oil until tender. Stir in curry powder and
cook about two minutes. Add broth, tomato puree, lemon juice and jam. Stir and
cook for 5 minutes to reduce and thicken. Cool 30 minutes or so, then stir in
the mayo and cream. Add chicken and mix thoroughly. Serve warm over rice, cold as a sandwich filling, or pretty much any way you like.
