A few weeks ago I received an email from my favorite British
café, announcing the soon-to-pass deadline for international deliveries before
Easter. International delivery! Suddenly all sorts of fantastic things seemed
possible. I could have REAL hot cross buns on Good Friday. I could warm up fat
rascals to serve with tea. I could top off Sunday brunch with a glorious simnel
cake. Calling a simnel cake a fruit cake doesn’t do it justice. It’s far
lighter than that; delicate, moist, and gently spiced. The apostle simnel at Bettys
is draped in marzipan, topped with 11 marzipan balls (Judas is missing), and
then lightly toasted. It goes for £26.00 (around $38). I would have ordered one
if the shipping hadn’t more than tripled the expense. I told a friend it cost
too much to get a simnel cake here, and she reminded me it would cost much more
to get ME to the CAKE.
