Seven Layer Salad with Creamy Salsa Dressing
1/2 cup Greek style yogurt
1/2 cup medium salsa
2 tablespoons
1 tablespoon olive oil
1 tablespoon apple cider vinegar
1 heaping tablespoon chopped green onions
1/2 teaspoon chili powder
1/4 teaspoon salt
1 to 2 heads romaine lettuce, roughly chopped
1 can black beans, drained and rinsed
1 medium red onion, chopped
1/2 cup olives, sliced
3/4 cup corn kernels
1 avocado, peeled and chopped (If you're not serving immediately, rinse avocado pieces with lime juice before adding.)
1 orange bell pepper, chopped
3 cups cherry tomatoes, halved
Combine first eight ingredients (down to the salt) to make
dressing, set aside. Prepare salad by layering remaining ingredients in the
order listed. A trifle bowl will show off this colorful dish. Serve with
dressing on the side.
