Contrary Wife



Chocolate Pudding

3/4 cup sugar
1/3 cup cornstarch
1/4 teaspoon salt
3 ounces unsweetened chocolate
4 cups whole milk (yes, you can use skim, but the texture and flavor will be slightly different)
1 teaspoon vanilla
Whipped cream
Chocolate shavings

Whisk together sugar, cornstarch and salt. Chop chocolate into small bits. Put milk and vanilla in saucepan. Warm over medium heat until bubbles begin to appear. Add chocolate and stir about one minute. Ladle about a cup of the hot milk into the sugar mixture and whisk until smooth. Repeat with the remaining hot milk. Put it all back into the pan over medium heat. Stir until pudding BEGINS to thicken, about two minutes. Ladle into serving bowls and cool at least half an hour. Serve topped with whipped cream and chocolate shavings.
