Double Chocolate Banana Bread
3 large ripe bananas
1/3 cup melted salt-free butter
3/4 cup packed brown sugar
1 teaspoon salt
1 large egg
1 teaspoon vanilla
1 1/4 cup flour
1/4 cup cocoa
1 teaspoon baking soda
1/4 teaspoon ground allspice (optional)
1/2 cup chocolate chips, divided
Butter a 9X5 loaf pan and preheat oven to 350F. Mash bananas
in large mixing bowl. Add butter, sugar, salt, egg and vanilla and mix until
well blended. In a medium bowl measure flour, cocoa, baking soda and allspice;
blend well. Add dry mixture to wet mixture and stir until just combined. Fold
in half of the chocolate chips. Pour into prepared pan and top with remaining
chocolate chips. Bake for 60 to 70 minutes. If you lightly press the top and it
springs back, your loaf is done!
