Slow Cooker Carne Asada
3 pounds flank steak
1/4 cup olive oil
1/4 cup orange juice
Juice of one lime about 2 tablespoons
2 teaspoons minced garlic
1 teaspoon chopped cilantro (optional)
1 teaspoon chili powder
1 teaspoon cumin
1 tablespoon honey (Our honey had crystalized, but it worked
just fine.)
Place flank steak in slow cooker. Whisk together
remaining ingredients; pour over steak, making sure all meat is covered with
juice. Cover and cook on low for 7-9 hours or until tender. Remove meat from
slow cooker and shred. Serve immediately or return to slow cooker on keep warm
and let soak in juices. We had ours with beans, rice and a little sweet corn.
But it would be delightful in soft tacos with cabbage slaw, shredded cheese, salsa
and guacamole. It might also be fun in burritos, in a rice bowl, or on top of
fries.
