Hawaiian Haystacks were a big hit in our family when our
kids were young, and they’re a big hit with THEIR kids, primarily because everyone
can pick and choose what goes on their plate and what doesn’t.
Slow Cooker Hawaiian Haystacks
3 pounds boneless, skinless chicken breasts (or thighs)
21 ounces condensed cream of chicken soup
1 1/2 cups low sodium chicken broth
1 yellow onion, coarsely chopped
4 ounces cream cheese
2 teaspoons paprika
Place chicken in slow cooker. Stir together remaining
ingredients and pour on top of chicken. Cover and cook on low about six hours.
Remove and shred chicken; return to pot long enough to reheat. Serve with hot
rice, shredded cheddar, sliced scallions and black olives, chopped tomato and
bell pepper, canned mandarin oranges and pineapple tidbits, and chow mein
noodles.
