Lady of the Lake



For several weeks we’ve been involved in a local production of A Christmas Carol. We sold out so many times we added another matinee last Saturday. Between the close of the matinee and cast call for the evening show, there wasn't much time for dinner. I didn’t want to face another hurried meal from a drive-through window, but I had all the ingredients for this: Pierce a whole spaghetti squash and microwave 20 minutes or until tender. While the squash is cooking, heat a can of cream of celery soup, 1/4 cup milk and 3/4 cup water to boiling. Remove from heat and stir in 1 cup shredded Swiss cheese and 2 tablespoons grated Parmesan. Cut squash in half, discard seeds. Scoop squash into large bowl, pour in cheese mixture and toss to coat. Sprinkle on more Parmesan, parsley and chives. It was quick, it was hot, and it was delicious. And so much better than fast food.
