Return to Coney Island

I’ve still got popcorn on my mind. Popcorn might be the perfect snack food. If you use an air popper and avoid butter and salt, it’s 100% whole grain. Boring? Toss freshly popped corn with a dash of cinnamon, or sprinkle it with lime juice and chili powder. I like to grate a bit of parmesan over the bowl, or use popcorn as a garnish on tomato soup. But my favorite way is to fill my biggest bowl with popped corn. I heat two cups of brown sugar, a cup of unsalted butter and half a cup of Karo syrup in a saucepan, stirring until the sugar is completely dissolved. I add a can of sweetened condensed milk, then pour the mixture into the popcorn and toss. Okay, so it’s not exactly health food. But it’s quicker and easier than the recipe I posted Tuesday, not to mention gentler to your teeth.
