I’ve still got popcorn on my mind. Popcorn might be the
perfect snack food. If you use an air popper and avoid butter and salt, it’s
100% whole grain. Boring? Toss freshly popped corn with a dash of cinnamon, or
sprinkle it with lime juice and chili powder. I like to grate a bit of parmesan
over the bowl, or use popcorn as a garnish on tomato soup. But my favorite way
is to fill my biggest bowl with popped corn. I heat two cups of brown sugar, a
cup of unsalted butter and half a cup of Karo syrup in a saucepan, stirring
until the sugar is completely dissolved. I add a can of sweetened condensed
milk, then pour the mixture into the popcorn and toss. Okay, so it’s not
exactly health food. But it’s quicker and easier than the recipe I posted Tuesday,
not to mention gentler to your teeth.
