With warmer weather on its way, it may be a good time to
think about food that takes very little preparation time and won’t heat the
whole kitchen:
Easy Vegetable Toss
1 pound broccoli florets
1 pound cauliflower florets
1/2 pound green beans, trimmed
1 large bell pepper, cut into strips
1/2 cup Italian dressing
1/3 cup shredded parmesan
Steam broccoli, cauliflower and beans for 3 to 5 minutes.
Vegetables should be bright but still crisp. Transfer to a large bowl. Add
remaining ingredients and toss. Serve warm with a loaf of fresh French bread. Serves 4 to 6 as a main course, 8 to 10 as a
side dish.
