New Home



I’ve said this before but it bears repeating. I’m not a fan of most peanut butters. I really detest the shortening-and-sugar-filled junk most people slather on white bread next to their store-bought grape-flavored jelly. I do like natural peanut butter; the kind with only two ingredients: peanuts and salt. I love it in Satay Sauce, in Mole, and in this recipe:

No-Bake Chocolate Cookies

2 cups granulated cane sugar
4 tablespoons Dutch-processed cocoa
1 stick unsalted butter (Please don’t use margarine.)
1/2 cup milk
1 cup natural peanut butter
1 tablespoon vanilla extract
3 cups oatmeal

In a heavy saucepan bring to a boil sugar, cocoa, butter and milk. Let boil for 1 minute then add peanut butter, vanilla and oatmeal. On a sheet of parchment paper, drop mixture with a teaspoon. Cool just long enough that it won’t burn your mouth. Serve with cold milk.
