You can substitute pork or chicken thighs for the chicken
breasts in this recipe. But, as pork is usually more expensive than chicken,
and as I’m married to a man who avoids dark meat, this is what we’re having.
Slow Cooker Sweet and Sour Chicken
4 boneless skinless chicken breasts cut into 1″ pieces
1 can (20 ounces) pineapple chunks
1 red pepper, coarsely chopped
1 green pepper, coarsely chopped
1 1/4 cups sugar
3/4 cup vinegar
1/2 cup ketchup
2 tablespoons soy sauce
3 tablespoons corn starch
1 teaspoon minced garlic
1/2 teaspoon minced ginger
Place chicken, pineapple and peppers in slow cooker. In a small
bowl, combine sugar, vinegar, ketchup, soy sauce, corn starch, garlic and
ginger. Stir well and pour over chicken. Cover and cook on low four hours. Serve
over hot rice or noodles. We like ours sprinkled with red pepper flakes and sesame
seeds.
