December Barn

If you want your whole house to smell of gingerbread men, but don’t want to hassle with a rolling pin and cookie cutters, try this. It’s as fool-proof a recipe as I’ve ever come across.

Gingerbread

2 1/3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground ginger
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 cup unsalted butter, plus extra for greasing pan
1/3 cup granulated sugar
1 cup molasses
3/4 cup hot water
1 egg

Heat oven to 325F. Grease bottom and sides of a 9” pan; dust lightly with flour. Beat all ingredients in stand mixer 30 seconds on low speed, stopping occasionally to scrape bowl. Beat three minutes at medium speed. Pour into pan. Bake 50 to 55 minutes or until an inserted toothpick comes out clean. Serve warm with cream, whipped cream or ice cream. It’s also delicious with hot applesauce or lemon curd.
