For Vanessa, who loves Hot Chocolate:
In a 2-quart glass pitcher, mix 2 tablespoons of granulated
sugar with 2 tablespoons of unsweetened baking cocoa (I like the Dutch
processed kind best). Using a wire whisk, gradually stir in 2 1/2 cups of milk
and 1/2 cup cream or half-and-half. Microwave until thoroughly heated, but not
boiling. Microwave ovens vary, so you’ll have to check every minute or two to
make sure you don’t overdo it. Add 1/4 cup semisweet chocolate chips and whisk
until chips are melted and mixture is smooth. Stir in 1/2 teaspoon of vanilla
(not imitation) and serve while hot. It’s delicious with a dollop of whipped
cream or a handful of tiny marshmallows.
