Ranger's Pride



My local grocery store is having a case lot sale right now. It’s a great time to put away some non-perishable food for a rainy day. When I can get them, I prefer fresh produce, dairy and meat over frozen or canned. But you should always have something on hand in case of whatever.

Eight Tin Taco Soup

1 (15 oz.) can black beans, drained and rinsed
1 (15 oz.) can pinto beans, drained and rinsed
1 (14.5 oz.) can petite diced tomatoes with juices
1 (15.25 oz.) can sweet corn, drained
1 (12.5 oz.) can white chicken breast, drained
1 (10.75 oz.) can cream of chicken soup
1 (10 oz.) can green enchilada sauce
1 (14 oz.) can chicken broth
1 packet taco seasoning

Combine all ingredients in a large pot and heat through. Do not boil. May be served with shredded cheddar and sour cream. Fills 12 mugs or 6 soup bowls.
