Counting the Stars



I wouldn’t know how to cook without my knives. I make a point of bringing a small multipurpose knife along when I travel. I like to stay in hotel suites with kitchenettes, and the knives I find there are never up to snuff. A dull knife is actually much more dangerous than a sharp one, because you have to “fight” when working with a dull blade. A well-sharpened knife should cut without effort. If your knives haven’t been sharpened in at least a year, it may be time to gather them up and take them to be professionally sharpened. If there are any knives in your collection that aren’t worth sharpening, ask yourself if they’re even worth having around. Do you store your knives in a knife block or a cutlery rack? If they’re rolling around in a drawer, consider sticking their points in corks. It will protect the tips and keep blades from hitting each other.
