Double Irish Chain




Saturday is a special day; it’s the day we get ready for Sunday. Today is a great day to pick up these ingredients because tomorrow is St. Patrick’s Day. I love to use my slow cooker, especially on Sundays. It is a little effort to load it in the morning while getting myself (and everyone else) ready for church. But it all pays off when we come home to the aroma of a delicious meal.

Slow Cooker Corned Beef and Cabbage

1 corned beef brisket, not in brine
1 cup water
3 carrots, quartered
3 potatoes, quartered
1 small head of cabbage

Cut beef into 6 pieces. Place in slow cooker. Add water. Press carrots and potatoes in around meat so they’re underwater. Sprinkle with salt and fresh ground pepper. Cover and cook on low 4 to 5 hours. Add cabbage. Turn to high and cook another hour or two. Serves 6.
