A journey of a thousand miles begins with a single step, and
that first step can be the most important one. Today the first step is to take
everything out of the fridge. Once it’s all out on your counter, it’s easier to
toss the things that really shouldn’t go back in: things past their “use by”
dates, things growing blue fur, things you don’t immediately recognize, and
things that could probably walk away by themselves. Once you’ve thrown them
away, put the food you want to keep in a cooler while you clean the fridge.
Wipe the shelves and drawers down with warm, soapy water and a soft cloth. Dry
everything with a clean cloth. Place a fresh box of baking soda in a rear
corner before you reload the food. Wipe the bottoms of cartons, bowls and bottles
as you return them to their places so they won’t undo your hard work.
