Saturday I posted a recipe for Dole Whip that promised to bring
the taste of Disneyland’s Enchanted Tiki Room home. We made it Sunday, but it
didn’t live up to its promise. The biggest problem was fiber. The crushed
pineapple completely overwhelmed my blender. In order to get the blades to
turn, I had to add a LOT more pineapple juice than the recipe called for. I
pureed the yellow mess, but it never got to a point that I’d call smooth. After
it was combined with the whipped cream and frozen, the best descriptor would be
“hairy.” It looked, felt and tasted nothing like the Adventureland treat. If I
were to try this again (I probably will), I’d puree pineapple sherbet or
sorbet with just enough pineapple juice to give it a soft-serve consistency. I’d
half-fill glasses with chilled pineapple juice, top it with my homemade whip,
and serve with a spoon and a straw.
